All classes will be held on Wednesdays starting February 29th, from 5:00 until 7:30pm.

_ 1)      Little Bites: Tapas, Hors d’oeuvres, Canapés & the like…
Join us in creating small bites of food. Whether you’re hosting a party and would like to have some handy hors d’oeuvres recipes or interested in learning about some cultural appetizers, come enjoy an evening of finger food. Wine will be served. $55

2)      Soups
Join Josh Smail in creating a variety of flavorful soups. I’ll let you in on a little secret: he does this each week at MTC, so he’s pretty good at it.  We’ll use the same simple ingredients and some classic techniques to make tasty soups. When you’re done, you’ll be able to re-create them at home whenever you like.  Wine will be served. $55

3)      Preserving, Pickling, Drying and Smoking…
Preparing foods for preservation is no longer just for long-term storage. At MTC, we regularly employ various preservation methods to create some our signature dishes. Come join us as we explore pickling, smoking, drying, and a host of other ways to infuse flavors and longevity into foods.  $50.

4)      Pasta 101
Join Chef Maust in learning to create his signature fettuccine served at the MTC. How about some colored/flavored pasta such as spinach, or perhaps, blackberry pasta! Basic composed pasta dishes and sauces will be entertained as well. Wine will be served. $55

5)      Latin Night
Latin cuisine is as diverse as the regions that make up Central and South America. Join Josh Smail in re-creating a variety of dishes from various geographical and culinary regions south of the border. Mexico’s Oaxaca region is known for its seven mole sauces, for example.  In Argentina, (carne) Asado is both a barbeque event and a dish to eat. Wine will be served. $55

6)      German Night
Join us for a night of German-themed cooking. We’ll prepare favorite recipes as well as new interpretations of regional German cuisine. Wine will be served. $55

7)      French Night
Join Ernest Schramm in learning techniques used in French cooking as we re-create dishes from Julia Child’s, “The Art of French Cooking.” As a basis for the class, we’ll use recipes which represent practical French cooking that you can use at home. Wine will be served. $55

8)      Fusion Night
Fusion cuisine: Culinary traditions combined from various cuisines/ styles.  Think outside the box; join Josh Smail in creating signature dishes. Imaginative and unique cuisine based on solid cooking techniques from various cuisines and cultures. Wine will be served. $55

9)      Girl’s Night Out
Ladies, leave your responsibilities at home and join us for a fun night of cooking, eating, and conversation. We will assist you in creating hors d’oeuvre, canapés, and appetizers...and then we’ll all eat them! Wear casual clothes and get ready for an evening of good food and good friends. Wine will definitely be served. $55

10)      Protein Fabrication
We’ll cover various preparations that involve buying economical products and fabricating, or preparing and portioning, them for cooking. We’ll break down a side of salmon, cut tranches, and then create a flavorful dish with our portions. Sliced pork roulade is on the menu, as well: butterflied and stuffed with hickory-smoked apple, nuts, and herbs. Portioning whole chickens in preparation for our recipes is included. $50

11)      The Art of the Tart
Tarts are the name of the game here. We’ll make some simple recipes, like the French Lemon Gallette using a sweet dough. We’ll also try some tart variants such as the Linzer Torte, Walnut tart, and the Tart Tatin with a savory, buttery crust. $50

12)      Bring the Outside In: Let’s BBQ!
Bring the outside to the inside - and get a jump on summer. We’ll make some cowboy foods like MTC’s pork ribs. BBQ’d baked beans, grilled chicken, grilled mashed potato salad, and corn bread round out the menu. Wine will be served. $55
